Our breads and pastry are created using age old techniques of simple baking tradition without the use of modern commercial ingredients to speed or simplify the processes of making our products. We keep to methods like using our own sourdough starter, unbleached flours, whole flours, whole grains, good salt, pure ingredients, traditional technique, and plenty of time before our dough lands on the stones in our ovens to become crusted, caramelized, aromatic, flavorful loaves and rolls for our customers. We have taken our understanding of the science behind dough production (yes we’re bread nerds) utilizing wild yeast strains in our well traveled starter, blending of flours, baking technique and applied it to craft to develop what we feel are well balanced, flavorful, textured bread varieties great for sandwiches, dipping, grilling , roasting, toasting, or just eating on its own.
We use our crafted breads and rolls as the base for our incredible sandwiches and the crunchy crown for our delicious salads. All made with shop made sauces, dressings, vinaigrette, fresh vegetables, premium meats and cheeses in unique creative combinations as well as our take on some of the classics. Because we’re bread nerds, we know dough, so we took our knowledge of fermentation for flavor + gluten development for structure + technique + heat application and developed our pizza dough on those same principles that we built our bread on. Carefully prepared lightly handled dough, slowly fermented, hand stretched, and stone baked. Finished off with shop made sauce, fresh vegetables, premium meats and cheeses in unique and creative combinations, as well our take on some of the classics.
